How to fit hampshire x Suffolk cross lamb?

I am showing sheep in 4-H and I am not quite sure how to fit my lambs this year. They have a lot of wool on their heads and all down their legs. I know with the legs I should card it up and trim it square but I have no idea how to do the head. My lambs have never had this much wool on their heads. Should I keep it there or trim it off. If I trim it off, do I trim all the hair off also since it is mixed in with it in some places?
